Spelt is one of the oldest grains cultivated - the ancient and distant cousin of our modern wheat! This grain is naturally high in fiber and is said to contain more protein, B complex vitamins, and both simple and complex carbohydrates than wheat. One of its greatest benefits, though, is that some gluten sensitive people have been able to include spelt based products in their diet. We use spelt with hard red wheat to create a fabulously light wheat loaf that tastes great!
